Morels in Buttermilk


  • 1t salt
  • 1/4t ground white pepper
  • 1/2t paprika
  • 1/2t sugar
  • 1/2t dry mustard
  • 1/8t ground turmeric
  • 1/2t garlic powder
  • 1/4t onion powder
  • 1c buttermilk
  • 4T butter
  • 2T canola oil

How to make it

The morels are dipped in beaten egg and rolled in the seasoned coating mixture. This recipe is an uptown version of that favorite from the excellent Mycological Society of San Francisco cookbook. Combine spices with the four. Dip morels in the buttermilk and then roll them in the flour mixture. Melt the butter with the oil in a skillet and sauté the morels until crispy and brown all over.
