Freeze Drying mushrooms for Science and Consumption

COMC Meeting, last gathering of 2026

Thursday, November 19
6:30-8:00 PM
Trinity Episcopal Church
469 NW Wall, downtown Bend

We have invited Carolina Livi of Veneta, Oregon, a molecular biologist and published researcher, who has perfected the process of preserving fungi specimens that maintain their structural identities and their nutritional value. Whether or not you have a home freeze dryer, this will be of special interest to anyone trying to preserve mushrooms!

From Carolina’s email: “Lyophilization used to be restricted to research laboratories and large commercial sites. Now with home freeze driers widely available, how does this method compare to freezing and dehydrating? Learn about authenticity and potency testing so you know what commercial mushrooms products you are buying and how they are commonly produced.”
